  2. Continue to stir until it turns light brown, after 10-15 min or just when it starts to brown ( reaches softball stage ) then set aside to cool for 5 min
  3. When cooled, stir in vanilla extract until lovely golden brown
  4. Pour into baking tray then cool at room temperature ( dont put into fridge ) .
  5. Cut into squares when set.

Preferably using an electric whisk beat for about five minutes, by which time the fudge will have thickened to the texture of stiff peanut butter - this is quite steamy and strenuous - and pour and push into the prepared tin. My daughter has a newfound love for classic vanilla fudge. She is a very healthy eater overall - she eats loads of fruits, is not afraid of green food and is very active, and so I decided to indulge her. But things didn't go smoothly at first. Yes, I can be incredibly impatient.
