  1. Top & tail the Pineapple.
  2. Wash the Pineapple, Mint & Ginger thoroughly under running water.
  3. Slice & Peel the Pineapple. Eat the slices OR/& make Face Mask.
  4. Cut the peels into small to medium pieces.
  5. Place in a large pot or skillet along with 8 Cups/2 liters of water.
  6. When it comes to a rolling boil, add the Cinnamon Stick, Ginger & the Mint.
  7. Reduce heat to low. Cover & let it simmer for 45 minutes.
  8. When done, pick up the Mint leaves with a slotted spoon & discard.
  9. Drink it warm or chilled topped with ice & with a dash of Honey. Add sliced Lime/Lemon & a few Mint leaves to jazz it up.
